Starched Cotton Buns


  • 2 cups warm milk
  • 1 cup vegetable oil
  • 1 egg
  • 2 packets dry yeast (or 1 packet fresh yeast)
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1.5 cups cornstarch
  • All-purpose flour
  • Filling:
  • Kaşar cheese (or any other desired filling)
  • For the topping:
  • Egg yolk
  • Sesame seeds, nigella seeds, oregano


  1. In the bowl where you will knead the dough, put 3 cups of flour and create a well in the middle.
  2. Pour the warm milk, sugar, and yeast into the well. Wait for about 5 minutes to activate the yeast.
  3. Add vegetable oil, salt, egg, and cornstarch on top of the activated yeast, and start kneading the dough.
  4. Continue kneading, adding flour gradually until you achieve a soft and non-sticky dough.
  5. Cover the dough and let it rest for about half an hour to rise.
  6. Take small pieces from the risen dough, about the size of a mandarin, and flatten them with your hands. Put the desired filling, such as kaşar cheese, or any other filling of your choice, in the middle and close the dough by rolling it into a ball.
  7. Place the shaped dough pieces on a greased baking tray.
  8. Repeat this process for all the dough pieces.
  9. Cover the tray and let the buns rest for 20 minutes for the final rise.
  10. After the final rise, brush the buns with egg yolk and make some cuts with a knife. Sprinkle sesame seeds, nigella seeds, and oregano on top.
  11. Bake in a preheated fan oven at 170°C (338°F) for 20-25 minutes.
  12. Once baked, remove the buns from the oven and serve. Enjoy your delicious Starched Cotton Buns!
