Crunchy Cookies with Filling

Ingredients:
- 1 packet butter or margarine
- 1/2 cup powdered sugar
- 2 eggs
- 3.5 cups all-purpose flour
- Filling:
- Quince preserve (only the fruit, no syrup) or apple filling, marmalade, etc.
- For the topping:
- Powdered sugar
- 2 packets vanilla
Instructions:
- In a deep bowl, mix all the ingredients except the flour until well combined.
- Gradually add the flour and knead until you obtain a soft dough.
- Let the dough rest for half an hour.
- Divide the rested dough into 4 equal pieces.
- Roll out each piece between two sheets of parchment paper to the size of a plate.
- Spread the quince preserve fruit or apple filling on the rolled-out dough, distributing it evenly.
- Roll the dough into a log shape and lightly press with a fork to create a pattern.
- Bake in a preheated oven at 180°C (356°F) for about 20 minutes.
- Allow the cookies to cool after baking.
- Sprinkle powdered sugar mixed with vanilla on top of the cooled cookies before serving.
