Crunchy Cookies with Filling


  • 1 packet butter or margarine
  • 1/2 cup powdered sugar
  • 2 eggs
  • 3.5 cups all-purpose flour
  • Filling:
  • Quince preserve (only the fruit, no syrup) or apple filling, marmalade, etc.
  • For the topping:
  • Powdered sugar
  • 2 packets vanilla


  1. In a deep bowl, mix all the ingredients except the flour until well combined.
  2. Gradually add the flour and knead until you obtain a soft dough.
  3. Let the dough rest for half an hour.
  4. Divide the rested dough into 4 equal pieces.
  5. Roll out each piece between two sheets of parchment paper to the size of a plate.
  6. Spread the quince preserve fruit or apple filling on the rolled-out dough, distributing it evenly.
  7. Roll the dough into a log shape and lightly press with a fork to create a pattern.
  8. Bake in a preheated oven at 180°C (356°F) for about 20 minutes.
  9. Allow the cookies to cool after baking.
  10. Sprinkle powdered sugar mixed with vanilla on top of the cooled cookies before serving.
