Striated Katmer Poğaça Recipe


  • 1 cup warm milk
  • Half a cup of vegetable oil
  • 2 eggs (1 yolk for topping)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet of yeast
  • 3 cups flour (please add gradually and adjust as needed)
  • 1 tablespoon butter


  1. In a mixing bowl, combine warm milk, vegetable oil, eggs, sugar, and salt. Mix well.
  2. Gradually add flour to the mixture and knead until you have a soft dough (please add flour gradually as the amount may vary).
  3. Add butter to the dough and continue kneading until well incorporated. It is better to knead on a floured surface.
  4. Let the dough rest for about 30-45 minutes until it doubles in size.
  5. Divide the dough into approximately 15-16 equal pieces and roll each piece into a long strip. Using a pizza cutter or a knife, make diagonal cuts on the dough without cutting the tip. Spread some butter on the dough and roll it from the tip, giving it a round shape. Place the rolled dough on a baking tray and let it rest for 15 minutes.
  6. Brush the top of the dough with egg yolk and bake in apreheated oven at 180 degrees Celsius (350 degrees Fahrenheit) until golden brown, first baking the bottom and then the top.
