Chocolate Cheesecake Recipe
INGREDIENTS
For the crust:
- 2 packets of oat biscuits
- 125 gr butter
- 1/2 cup of hazelnuts
For the filling:
- 800 gr cream cheese
- 1 box of cream (200 ml)
- 1 cup of granulated sugar
- 2 tablespoons of cornstarch
- 2 tablespoons of flour
- 1 packet of vanilla
- 3 eggs
For the chocolate sauce:
- 100 ml cream
- 50 gr dark chocolate
- 50 gr milk chocolate
INSTRUCTIONS
- For the crust, grind the oat biscuits and hazelnuts in a food processor until fine. Add melted butter and mix well. Spread the mixture onto the base of a springform pan and press it firmly. Refrigerate until firm. Meanwhile, prepare the filling.
- In a bowl, beat the cream cheese and sugar with a hand mixer until smooth. Add cream, cornstarch, flour, vanilla, and eggs one by one, and continue to beat until well combined.
- Pour the filling over the crust in the springform pan. Tap the pan gently on the counter to remove any air bubbles. Place a baking tray filled with water on the lower rack of the oven and place the cheesecake on the middle rack. Bake at 175 degrees Celsius for about 30-40 minutes until the center is slightly jiggly.
- Remove the cheesecake from the oven and let it cool slightly. In the meantime, prepare the chocolate sauce by heating the cream in a saucepan. Remove from heat and add the dark and milk chocolate. Stir until the chocolate is fully melted and the sauce is smooth.
- Pour the chocolate sauce over the cooled cheesecake. Refrigerate the cheesecake overnight to set. Once chilled, remove the springform pan and decorate the cheesecake as desired with fresh raspberries, almonds, or pistachios.
