Vegetable Stuffed Rolls


For the Meatballs:

  • 400g ground beef
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 cloves of garlic (grated)
  • 1 medium-sized onion (grated)
  • Meatball spices (cumin, black pepper, red pepper flakes)
  • Salt

For the Vegetable Filling:

  • 4 zucchinis
  • 5 eggplants
  • 3 red bell peppers
  • Cooking oil

For the Sauce:

  • 1.5 cups hot water
  • 1 tablespoon tomato paste


  1. Let’s start by preparing the meatball mixture. In a deep bowl, combine ground beef, egg, breadcrumbs, grated garlic, grated onion, meatball spices, and salt. Knead the mixture well and let it rest in the refrigerator for 20 minutes. You can leave it to rest for a longer time if you have more time.
  2. Peel the eggplants partially and cut them into thin, long slices. To remove their bitterness, soak the eggplant slices in salted water. Cut the zucchinis and red bell peppers into long, thin slices as well.
  3. In a frying pan, heat some cooking oil and lightly fry the eggplant, zucchini, and red bell pepper slices on both sides. Place them on a plate with paper towels to remove excess oil.
  4. Take the meatball mixture out of the refrigerator. Take a small portion of the mixture and flatten it on your hand. Place the mixture on one end of an eggplant slice and roll it up. Repeat the process for zucchini and red bell pepper slices.
  5. Arrange the stuffed rolls in a baking dish.
  6. In a separate bowl, mix hot water and tomato paste to prepare the sauce. Pour the sauce over the stuffed rolls in the baking dish.
  7. Cover the dish with aluminum foil or greased parchment paper.
  8. Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit) and bake the stuffed rolls for about 30 minutes. Then, remove the foil or parchment paper and continue baking until the tops are golden brown.
  9. Once the Vegetable Stuffed Rolls are fully cooked, take them out of the oven and serve them hot.
