Patisserie-Style Eclairs Recipe

Ingredients:

For the Dough:

  • 1 cup water
  • 1 cup all-purpose flour
  • 100g margarine
  • 3 large eggs (at room temperature)
  • A pinch of salt
  • 1 teaspoon sugar

For the Custard Filling:

  • 3.5 cups milk
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • Half a packet of whipped cream powder (kremşanti)
  • 1 egg yolk
  • 1 tablespoon margarine
  • Vanilla extract

For the Topping:

  • 2 packets of milk chocolate

Instructions:

Let’s start by preparing the custard filling. In a saucepan, combine all the ingredients except for the whipped cream powder. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. Once the custard is cooked, remove it from the heat and let it cool down. When it’s lukewarm, add half of the whipped cream powder and blend until smooth. Set it aside to cool completely.

Now, let’s make the dough. In a separate saucepan, melt the margarine and then add water, sugar, and salt. Bring the mixture to a boil. When it starts boiling, add the flour and stir until the dough comes together and forms a ball. Cook the dough for a few more minutes, stirring continuously, until it becomes smooth and loses its raw flour taste. Let the dough cool down.

Preheat the oven to 170°C (340°F).

Once the dough has cooled, add the eggs one by one and blend them into the dough using a hand mixer or a wooden spoon. The dough should have a smooth and thick consistency. Transfer the dough into a piping bag and pipe it onto a baking sheet lined with parchment paper, leaving space between each piece.

Using a brush, lightly smooth out the edges of the piped dough with some vegetable oil. Bake the dough in the preheated oven for about 40 minutes until it turns a golden brown color. Do not open the oven during baking, as the dough might collapse.

Once the dough has baked and cooled, cut it in half using a knife, and fill the center with the prepared custard filling using a piping bag.

For the topping, melt the milk chocolate using the double boiler method. Dip the top of each filled eclair into the melted chocolate and place them on a serving tray.

For an optional decorative touch, you can use the remaining melted chocolate in a piping bag to create designs on top of the eclairs.
