Full Measure Delicious Tiramisu


For the Cake:

  • 4 eggs (at room temperature)
  • 1 cup sugar
  • A pinch of salt
  • Half a cup of warm water
  • Slightly less than 2 teacups of flour
  • 2 tablespoons cocoa powder
  • 1 packet vanilla extract
  • 1 packet baking powder

For the Cream:

  • 1 liter milk
  • 1 cup granulated sugar
  • 2.5 Turkish coffee cups of flour
  • 1 heaping tablespoon cornstarch
  • 2 egg yolks
  • 1 packet vanilla extract
  • 400g strained cream cheese (labne)
  • 1 packet whipped cream (kremşanti)

For Soaking:

  • 1 cup milk
  • 2 cups water
  • 2 tablespoons instant coffee granules
  • 1 tablespoon sugar

For Topping:

  • 1 teaspoon cocoa powder
  • 1 teaspoon Turkish coffee


Let’s start by preparing the cream for the dessert. In a saucepan, combine all the ingredients except for the labne and whipped cream. Cook the mixture until it thickens. Once cooked, remove it from the heat and let it cool down, stirring occasionally. Once completely cooled, add the labne and whipped cream, and blend until smooth.

For the cake, separate the egg whites and yolks into two separate bowls. In one bowl, beat the egg whites with sugar and salt until stiff peaks form. In the other bowl, beat the egg yolks with warm water until frothy. Combine the egg yolks with the beaten egg whites. Add the remaining cake ingredients and mix gently with a spatula. Pour the batter into a greased and floured 180°C (350°F) preheated oven, and bake until fully cooked. Once the cake is baked, let it cool and then divide it into three layers.

Next, soak each layer of the cake with the coffee mixture.

For the coffee mixture, mix milk, water, instant coffee granules, and sugar in a bowl until well combined.

Spread the prepared cream between each soaked layer of the cake. Cover the top with the remaining cream, and then cover the whole dessert with plastic wrap. Refrigerate for at least 2 hours.

Finally, sprinkle a mixture of cocoa powder and Turkish coffee on top of the dessert before serving.
