Balloon Lavash


  • 1.5 teaspoons instant yeast
  • 1 cup warm water (200 ml)
  • 2.5-3 cups all-purpose flour
  • 1.5 teaspoons salt


  1. In a mixing bowl, combine the yeast and warm water. Add the flour and salt, then knead the dough until smooth. Divide the dough into 5 equal pieces and cover them, allowing them to rise for about 30-40 minutes.
  2. Roll out each ball of dough to a thickness of 2-3 mm. Place them on a baking sheet lined with parchment paper.
  3. Brush the tops of the lavash with egg yolk. Sprinkle with sesame seeds and nigella seeds (black cumin).
  4. Preheat your oven to the highest setting, around 240°C (464°F). Bake the lavash for 2-3 minutes until it puffs up and becomes golden. Be careful not to overbake it; once it balloons, take it out of the oven.
  5. Serve the balloon lavash warm. Enjoy!
