Ingredients:
For the Cake:
- 4 large eggs, at room temperature
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 3 tablespoons cocoa powder
- 1 packet vanilla extract
- 1 packet baking powder
For the Custard:
- 3 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- 1 cup granulated sugar
- 2 tablespoons cocoa powder
- 1 packet vanilla extract
- 1 liter milk
- 1 packet chocolate-flavored whipped cream (can also use plain)
To Soak the Cake:
For the Ganache:
- 200 ml heavy cream
- 1 packet bitter chocolate
Instructions:
- Let’s start by preparing the cake. Beat the eggs and sugar until foamy. Then, add the rest of the cake ingredients and mix well. Pour the batter into a greased baking tray and bake in a preheated oven at 180°C (350°F) until the cake is fully cooked. Once the cake is baked, let it cool down slightly.
- While the cake is still warm, pour the milk all over it so that it gets soaked evenly.
- For the custard, mix all the ingredients except for the vanilla and chocolate-flavored whipped cream in a saucepan. Cook the mixture over medium heat, stirring constantly, until it thickens and reaches a pudding-like consistency. Once ready, remove it from the heat, add the vanilla extract, and blend it with a blender until smooth. Let the custard cool to room temperature.
- In a separate bowl, prepare the chocolate-flavored whipped cream according to the package instructions. Once ready, fold it into the cooled custard to make it light and fluffy.
- Spread the custard mixture over the soaked cake, making sure to cover the entire surface.
- For the ganache, heat the heavy cream in a small saucepan over low heat. Add the bitter chocolate and stir until fully melted and combined.
- Pour the ganache over the custard layer, making sure to cover the top evenly.
- Refrigerate the cake for at least 3 hours or overnight to allow the flavors to meld.
- Before serving, decorate the cake as desired. Slice and enjoy your delicious 15-person tray cake!
Note: Preparing the cake a night before serving is recommended for a delicious result.
