15-Person Tray Cake


For the Cake:

  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 3 tablespoons cocoa powder
  • 1 packet vanilla extract
  • 1 packet baking powder

For the Custard:

  • 3 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 packet vanilla extract
  • 1 liter milk
  • 1 packet chocolate-flavored whipped cream (can also use plain)

To Soak the Cake:

  • 2.5 cups milk

For the Ganache:

  • 200 ml heavy cream
  • 1 packet bitter chocolate


  1. Let’s start by preparing the cake. Beat the eggs and sugar until foamy. Then, add the rest of the cake ingredients and mix well. Pour the batter into a greased baking tray and bake in a preheated oven at 180°C (350°F) until the cake is fully cooked. Once the cake is baked, let it cool down slightly.
  2. While the cake is still warm, pour the milk all over it so that it gets soaked evenly.
  3. For the custard, mix all the ingredients except for the vanilla and chocolate-flavored whipped cream in a saucepan. Cook the mixture over medium heat, stirring constantly, until it thickens and reaches a pudding-like consistency. Once ready, remove it from the heat, add the vanilla extract, and blend it with a blender until smooth. Let the custard cool to room temperature.
  4. In a separate bowl, prepare the chocolate-flavored whipped cream according to the package instructions. Once ready, fold it into the cooled custard to make it light and fluffy.
  5. Spread the custard mixture over the soaked cake, making sure to cover the entire surface.
  6. For the ganache, heat the heavy cream in a small saucepan over low heat. Add the bitter chocolate and stir until fully melted and combined.
  7. Pour the ganache over the custard layer, making sure to cover the top evenly.
  8. Refrigerate the cake for at least 3 hours or overnight to allow the flavors to meld.
  9. Before serving, decorate the cake as desired. Slice and enjoy your delicious 15-person tray cake!

Note: Preparing the cake a night before serving is recommended for a delicious result.
